  • To begin with, wash and rinse the quinoa grains and cook them in a pan for about 20 minutes.
  • Pour the water from the quinoa and set it aside.
  • Peel onions, garlic and leeks, and cut them into julienne strips.
  • Put the vegetables in a blender or food processor and blend until the ingredients are well mixed.
  • Although you can cook the vegetables before the previous step, it is not necessary to do so and it will take you longer.
  • Add vegetable milk, boiled quinoa, oats, salt and spices to taste and stir.
  • Then peel, wash and grate the carrots over the mixture and integrate it all.
  • Add the breadcrumbs until you get an even consistency.
  • Put the mixture in the fridge for a few hours so that it does not lose its consistency.

You can cook them in two ways: Fry them in a pan or bake them in the oven.

  • To fry them, pour lots of virgin olive oil on a pan and fry the steaks when the oil is hot enough. Remove excess oil with paper towel.
  • To bake them, arrange the steaks on a suitable baking sheet and bake them for ten minutes on each side at 175 ° C with top and bottom heat.
  • Now they are ready to eat!

Burgers

Course of action

  • Peel and chop onions, carrots and garlic and add them to a pan with a little olive oil. Cook over low heat for about 15 minutes.
  • Add the previously peeled and chopped red pepper and cooked brown rice. Mix well to integrate all the flavors.
  • Take small portions of the dough and make steaks. Then dip them in cornmeal or grater (whichever you prefer).
  • We recommend that you use a frying pan to cook them if you have dipped them in cornmeal because they may not fry well in the oven.
  • Heat plenty of oil and add the steaks one by one so that the oil does not lose its temperature.
  • When taking them off the pan, place them on a platter with paper towel to remove excess oil.
  • Enjoy!

To accompany these vegan burger steaks, you can opt for multi-grain or whole-grain breads and add tomato, vegan mayonnaise, pesto sauce, mustard, vegan cheese, mushrooms, or any combination you find tasty.

If you prefer to eat the steaks without bread, you can combine them with arugula, tomato and mustard or vinaigrette salad. To complete lunch or dinner, you can cook creamy vegetables (zucchini, squash or spinach) and eat fruit for dessert. This way you meet your nutritional needs.
