Yogurt has traditionally been used in the kitchen for desserts, but you can use it as you like – it depends on your taste. Yogurt is one of the healthiest foods, and highlighted by dietitians as an important part of a varied diet.

Greek yogurt is made from fermented cow or goat milk and must contain at least 9% milk fat. That is why it is a more creamy, viscous and delicate yogurt than the traditional one.

Greek yogurt is different from the ordinary

It is also better than the traditional yogurt because the fermentation process is less automated and retains more proteins and minerals. In other words, Greek yogurt is healthier and fatter than regular.

Although this kind of yogurt is available in stores (at a fairly high price), there are some who would rather make it themselves. It is a much cheaper and more fun way to get Greek yogurt.

How to make Greek yogurt at home

The fermentation process of milk is very important when making yogurt. Make sure you have a yogurt machine, or an airtight jug. You must be able to store it in a place with a stable, warm temperature.

Ingredients

  • 4 1/2 cups goat’s or cow’s milk (900 ml)
  • 1/2 cup cream (100 ml)
  • 1/4 cup natural yogurt

  • If you have a yogurt machine at home, then it is somewhat easier to make yogurt. Just put all the ingredients in and let it ferment for at least eight hours.
  • When that time has passed, strain the contents into another container and put it in the refrigerator for four hours.

Cooking without a yogurt machine

It is really easy to make your own Greek yogurt in the traditional way that you have done for centuries. It requires a little patience as the fermentation takes time. But it is the healthiest yogurt.

  • Start by putting all the ingredients in a saucepan over medium heat, and bring to a boil.
  • The ideal temperature is around 85 degrees. It is a good idea to use your kitchen thermometer if you have one. If not, you can test it with your finger. Stick your finger in the milk, and if you can hold it there for at least five seconds, then the temperature is right.
  • When it boils, let it cool for about 15 minutes.
  • Then pour the mixture into a container with an airtight lid, put it in a warm place and leave to ferment for 8-10 hours.
  • When that time has passed, strain the yogurt into a container. You should use gauze or cheesecloth for this process.
  • You can also let the yoghurt strain in the fridge, as it may well take some time.
  • Finally, when you are about to finish your yogurt, pour it into smaller bowls for individual servings. The rest of the liquid from the yogurt is a milk serum:  You can drink it, or use it in other recipes.
  • You are now ready to enjoy your delicious Greek yogurt at home.

Tips

  • The perfect place to let the yogurt ferment is in the oven. You can preheat the oven to a low temperature, turn it off, and put the yogurt in it.
  • If you do not have a jug with a tight-fitting lid, you can easily use a bowl. Put a tea towel over it and secure it with a wrap or bag.
  • If you want your yoghurt to have a thicker structure, add 1-2 tablespoons of milk powder. This will make your mixture thicker before it ferments.
  • If you want a low-calorie yogurt,  you can use light ingredients, such as skim milk and natural low-fat yogurt.
  • It is a good idea to work with quantities such as 1 liter in each container you want to cook.
  • If you use goat milk, the time for the fermentation process should be doubled, up to 20 to 24 hours.
