To make this recipe we need the following ingredients:

  • 3 eggs
  • 6 very ripe bananas
  • 1 cup coconut in strips (80 g)
  • 1 cup raisins (160 g)
  • ½ cup olive oil, sunflower oil or coconut oil (100 cc)
  • ½ cup of alternative milk such as oats, coconut, rice, almonds, etc. (100 ml)
  • 3 tablespoons honey (90 g)
  • 1 tablespoon vanilla extract (15 ml)

Cooking

To prepare this simple banana bread, we just need to follow these steps:

  • Use a blender throughout the recipe.
  • Before you start making the bread, preheat the oven to 180º C (356º F).
  • Stir the three eggs together for one minute.
  • Add the liquid ingredients: oil, the alternative milk and vanilla extract. Stir all the ingredients together.
  • Then mix in the dry ingredients: bananas, roasted coconut and honey.
  • When everything is mixed together, stir in the raisins and mix well.
